Lemon Drizzle Cake Mix


A refreshing cake, oozing with the delicious hint of lemon throughout this moist soft sponge!



Heat oven to 180C/160C Fan /350F/Gas 4
Grease or line a 2 lb loaf tin
Add to a bowl
    3 large eggs
    170g butter
    zest of 2 lemons
Add the cake mix packet to the bowl. Mix all ingredients together until
they form a nice smooth batter. You can user a mixer if you have
one, but not essential. Tip mixture into loaf tin and place in oven for 30 – 35 mins.
Meanwhile, whisk together juice of 2 lemons and the separate icing sugar packet
(don’t worry if this is runny, the cake will soak it up before it sets).
Test the sponge by inserting a skewer into the cake, if it comes out clean,
it’s ready. Once ready, remove from oven and make holes through the top of sponge,
all the way round and pour over the drizzle mixture.
Leave cake in tin to cool slightly and the drizzle to set before removing from
tin and cool on a wire rack.
