Coffee and Walnut Cake Mix


A deliciously light and tasty cake

Coffee and cake anyone!

Makes 12 slices



Heat oven to 180° C / 350° F / 160° C fan oven / Gas Mark 4

Grease and line 2 lb loaf tin

Add 50 ml of boiled water into a measuring jug, add contents of coffee sachet, stir

Put to one side

Put in a bowl and beat together

with a spoon or electric whisk

170 g soft butter

2 large eggs

Add contents of jar and stir

Stir the coffee again and pout into mixture, mix well.

Pour the mixture into the loaf tin,

Bake for approx. 45 minutes or

until skewer comes out clean.

Cool in tin before placing on wire rack
