Heat oven to 180°C/350°F/Gas 4.
Grease & line 2lb loaf tin
Beat together with a wooden spoon or mix with an electric whisk
- 105g Soft Butter
- 2 Medium Eggs
- Stir in 190g Grated Carrot
Add contents of jar & stir
Tip mixture into loaf tin
Bake 50 – 55 mins or until skewer comes out clean
Cool in tin before placing on wire rack
Makes approx. 20 pieces
